Ian Jenson is a microbiologist with wide experience in the food industry research and quality. He has worked with lactic acid bacteria, yeast and pathogens in dairy, bread and meat both in Australia and internationally. He has published over 20 research papers and several book chapters. In addition to speaking several times at the Dubai International Food Safety Conference, he has presented at conferences in the USA, Canada, China, Taiwan and Korea.
